Description

A quick, creamy spinach pasta sauce that’s vibrant in color and full of flavor, ready in just ten minutes.


Ingredients

Scale
  • 3 oz fresh spinach (100g)
  • Large handful basil
  • 2 cloves garlic, crushed
  • 2 tbsp lemon juice
  • 1 cup coconut milk
  • 3 tbsp nutritional yeast
  • 1 tsp salt
  • ½ tsp black pepper
  • 7 oz your favorite pasta (about 200g)

Instructions

  1. Add spinach, basil, garlic, lemon juice, coconut milk, nutritional yeast, salt, and black pepper into your blender.
  2. Blend on high power for about 30 seconds or until smooth.
  3. Transfer the sauce to a large pan and simmer for 2-3 minutes over medium heat.
  4. Cook pasta in salted water, then add it directly to the sauce, coating the strands well.
  5. Serve in bowls, topped with extra basil or vegan cheese if desired.
