Ingredients

  • 4 chicken sausage links, sliced into bite-sized pieces
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, sliced into rounds
  • 1 red onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley for garnish

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a large bowl, combine the chopped bell peppers, zucchini, and red onion.
  3. Add the sliced chicken sausage to the bowl of veggies.
  4. Drizzle the olive oil over the mixture.
  5. Sprinkle garlic powder, smoked paprika, salt, and black pepper over the ingredients. Toss to coat.
  6. Transfer the mixture into the air fryer basket in a single layer.
  7. Air fry for 15-18 minutes, shaking the basket halfway through.
  8. Remove the basket when the veggies are golden and the sausage is cooked through.
  9. Garnish with chopped parsley if desired.
