- 1 yellow bell pepper, chopped
- 1 zucchini, sliced into rounds
- 1 red onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley for garnish
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a large bowl, combine the chopped bell peppers, zucchini, and red onion.
- Add the sliced chicken sausage to the bowl of veggies.
- Drizzle the olive oil over the mixture.
- Sprinkle garlic powder, smoked paprika, salt, and black pepper over the ingredients. Toss to coat.
- Transfer the mixture into the air fryer basket in a single layer.
- Air fry for 15-18 minutes, shaking the basket halfway through.
- Remove the basket when the veggies are golden and the sausage is cooked through.
- Garnish with chopped parsley if desired.
