- 1 cup apple cider
- 1 cup caramel sauce
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the apple cider and vanilla.
- Gradually incorporate the dry mixture into the wet ingredients until fully combined.
- Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes or until the cookies are lightly golden.
- Allow cookies to cool completely on a wire rack before assembling.
- Spread caramel sauce on one cookie and top it with another to form a sandwich.
