- 6 eggs
- 2 tablespoons cream
- 1/2 teaspoon fine salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon olive oil
- 6 ounces arugula
- 1/4 cup crumbled feta
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, beat the eggs with cream, fine salt, black pepper, and garlic powder until frothy.
- Heat olive oil in a skillet over medium heat, add arugula, and sauté until wilted.
- Pour the egg mixture over the arugula and cook until the edges are bright but the center is still tender.
- Sprinkle the crumbled feta on top and transfer the skillet to the oven.
- Bake until the center is set and the frittata is puffy.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for longer storage.
