Description

A warm, fluffy frittata featuring vibrant arugula and creamy feta, perfect for breakfast or brunch.


Ingredients

  • 6 eggs
  • 2 tablespoons cream
  • 1/2 teaspoon fine salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 6 ounces arugula
  • 1/4 cup crumbled feta

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, beat the eggs with cream, fine salt, black pepper, and garlic powder until frothy.
  3. Heat olive oil in a skillet over medium heat, add arugula, and sauté until wilted.
  4. Pour the egg mixture over the arugula and cook until the edges are bright but the center is still tender.
  5. Sprinkle the crumbled feta on top and transfer the skillet to the oven.
  6. Bake until the center is set and the frittata is puffy.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for longer storage.
