Description

A vibrant salad combining crisp Honeycrisp apples, peppery greens, creamy feta cheese, and crunchy nuts, all drizzled with a zesty homemade dressing.


Ingredients

  • 6 cups mixed greens (spinach, arugula, and spring mix)
  • 1 large Honeycrisp apple, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup toasted pecans or walnuts
  • 1/4 cup dried cranberries
  • 1/4 cup pomegranate seeds (optional)
  • 1/4 red onion, thinly sliced
  • 2 tablespoons pumpkin seeds (optional)
  • 1 tablespoon fresh thyme leaves (optional)
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a large salad bowl, add the mixed greens of spinach, arugula, and spring mix.
  2. Layer on the thinly sliced Honeycrisp apple, red onion, and scattered dried cranberries.
  3. Sprinkle the crumbled feta cheese on top, then add the toasted pecans (or walnuts) and pumpkin seeds.
  4. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, and a pinch of salt and pepper.
  5. Drizzle the dressing over the assembled salad and gently toss to coat.
  6. If desired, top with pomegranate seeds and fresh thyme leaves. Serve immediately.

Notes

For extra protein, consider adding grilled chicken or chickpeas. You can prep ingredients ahead of time and assemble just before serving.
