A delightful avocado toast topped with fresh tomato salsa, perfect for any meal of the day.
Ingredients

- 2 ripe avocados
- 1 cup cherry tomatoes, diced
- 1/4 cup red onion, finely chopped
- 2 tbsp fresh cilantro, chopped
- 1 tbsp lime juice
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 baguette or crusty bread, sliced
- 1 clove garlic, halved
Instructions
- In a bowl, cut and smash the avocados. Add lime juice, salt, and pepper, mashing to your desired consistency.
- In a separate bowl, combine diced cherry tomatoes, red onion, and fresh cilantro. Drizzle with olive oil, season with salt and pepper, and toss gently.
- Preheat the oven to 375°F (190°C). Slice the baguette, drizzle with olive oil, and toast it for about 10 minutes until golden and crisp.
- Rub the cut-side of the garlic clove over each slice of toasted bread.
- Spread the avocado mash over each piece of bruschetta.
- Top with the tomato mixture and garnish with extra cilantro if desired. Enjoy immediately.
Notes
Store any unused avocado mash in an airtight container in the fridge. Press plastic wrap directly onto the surface to reduce oxidation.
