Crispy, cheesy Baked Parmesan Zucchini Rings that are perfect as a snack or side dish.

- 2 medium zucchini
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1/4 cup all-purpose flour
- Olive oil spray
Instructions
- Preheat the oven to 425°F (220°C).
- Cut the zucchini into 1/4-inch thick rounds.
- In a shallow dish, mix the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
- In another dish, beat the eggs. In a third dish, place the flour.
- Dip each zucchini ring in flour, then the egg wash, and finally press into the breadcrumb mixture.
- Place the coated zucchini rings on a baking sheet lined with parchment paper and lightly spray with olive oil.
- Bake for 20-25 minutes until golden brown and crispy.
- For the dip, mix yogurt or sour cream with lemon juice, and add salt and pepper to taste.
- Serve warm with the dip.
Notes
For extra crunch, consider using panko breadcrumbs. You can also experiment with different spices in the breadcrumb mixture.
