Description

Crispy, cheesy Baked Parmesan Zucchini Rings that are perfect as a snack or side dish.


Ingredients

  • 2 medium zucchini
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • Olive oil spray

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the zucchini into 1/4-inch thick rounds.
  3. In a shallow dish, mix the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. In another dish, beat the eggs. In a third dish, place the flour.
  5. Dip each zucchini ring in flour, then the egg wash, and finally press into the breadcrumb mixture.
  6. Place the coated zucchini rings on a baking sheet lined with parchment paper and lightly spray with olive oil.
  7. Bake for 20-25 minutes until golden brown and crispy.
  8. For the dip, mix yogurt or sour cream with lemon juice, and add salt and pepper to taste.
  9. Serve warm with the dip.

Notes

For extra crunch, consider using panko breadcrumbs. You can also experiment with different spices in the breadcrumb mixture.
