Description

A comforting casserole with baked potatoes, tender chicken, and vibrant broccoli, perfect for family gatherings and cozy evenings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked chicken, shredded or diced
  • 1 tablespoon butter
  • 2 cups fresh broccoli florets
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced potatoes with olive oil, salt, and black pepper until they are evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until golden brown and tender.
  4. While the potatoes are roasting, steam or boil the broccoli florets until just tender, about 4–5 minutes. Drain and set aside.
  5. In a saucepan over medium heat, melt the butter and add the shredded or diced chicken, stirring occasionally until heated through.
  6. In a separate mixing bowl, combine the sour cream, milk, garlic powder, onion powder, and half of the cheddar cheese.
  7. In a large casserole dish, layer the roasted potatoes, followed by the cooked chicken and broccoli.
  8. Pour the sour cream mixture over the top and gently stir to combine all ingredients evenly in the dish.
  9. Sprinkle the remaining cheddar cheese and grated Parmesan cheese over the top of the casserole.
  10. Reduce the oven temperature to 350°F (175°C) and bake the casserole for 20-25 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven and let it sit for 5 minutes before serving.
  12. Garnish with fresh parsley if desired.
