Deliciously crispy Baked Zucchini Bites made with fresh zucchini, cheese, and a hint of garlic, perfect for snacking or as an appetizer.
Ingredients

- 1 lb zucchini, coarsely grated
- 1 teaspoon fine salt
- 1 medium-sized egg
- 1 small garlic clove, grated
- 1/3 cup parmesan cheese, grated
- 1/2 cup breadcrumbs
- 3 tablespoons parsley, chopped
- 1/2 scant teaspoon fine salt
- 1/8 teaspoon black pepper
Instructions
- Grate the zucchini using a box grater or food processor.
- Transfer grated zucchini to a bowl, sprinkle with 1 teaspoon fine salt, toss, and let sit for 10 minutes.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wring out most of the liquid from the salted zucchini.
- In a bowl, combine zucchini, egg, grated garlic, parmesan cheese, breadcrumbs, parsley, remaining salt, and black pepper; mix until well combined.
- Shape mixture into small balls and place on the prepared baking sheet.
- Bake for about 15-18 minutes until golden brown and crispy.
- Serve warm for the best texture.
Notes
For healthier options, use almond flour instead of breadcrumbs and dairy-free cheese if necessary.
