Description

Deliciously crispy Baked Zucchini Bites made with fresh zucchini, cheese, and a hint of garlic, perfect for snacking or as an appetizer.


Ingredients

  • 1 lb zucchini, coarsely grated
  • 1 teaspoon fine salt
  • 1 medium-sized egg
  • 1 small garlic clove, grated
  • 1/3 cup parmesan cheese, grated
  • 1/2 cup breadcrumbs
  • 3 tablespoons parsley, chopped
  • 1/2 scant teaspoon fine salt
  • 1/8 teaspoon black pepper

Instructions

  1. Grate the zucchini using a box grater or food processor.
  2. Transfer grated zucchini to a bowl, sprinkle with 1 teaspoon fine salt, toss, and let sit for 10 minutes.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Wring out most of the liquid from the salted zucchini.
  5. In a bowl, combine zucchini, egg, grated garlic, parmesan cheese, breadcrumbs, parsley, remaining salt, and black pepper; mix until well combined.
  6. Shape mixture into small balls and place on the prepared baking sheet.
  7. Bake for about 15-18 minutes until golden brown and crispy.
  8. Serve warm for the best texture.

Notes

For healthier options, use almond flour instead of breadcrumbs and dairy-free cheese if necessary.
