- 2 cups pistachio shortbread cookies, crushed
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup chopped nuts (pistachios, walnuts, or almonds)
- 1/2 cup honey
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup phyllo dough, layered
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine crushed pistachio cookies and melted butter, then press into the bottom of a springform pan for the crust.
- Beat cream cheese until smooth, then gradually add sugar and vanilla extract, mixing until fluffy.
- Add eggs one at a time, mixing until just combined.
- Pour cheesecake filling over the crust and smooth the top.
- Bake for 45-50 minutes until the center is set and edges are golden.
- While baking, layer phyllo dough with butter and nuts in a separate dish, drizzle with honey, and bake until golden.
- Layer baklava over cooled cheesecake and refrigerate for at least 4 hours before serving.
Notes
Use fresh ingredients for better flavor. Experiment with different nuts. Serve with whipped cream or ice cream.
