- 1 lb beef (stew meat)
- 1 cup barley
- 4 cups beef broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup green beans, chopped
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the beef cubes, browning them on all sides.
- Add the chopped onion and minced garlic to the pot; sauté for about 3-4 minutes until the onion is softened.
- Stir in the diced carrots, celery, and green beans; cook for another 3-5 minutes.
- Incorporate the barley, then pour in the beef broth, and sprinkle in the dried thyme, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 1 hour.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with fresh parsley if desired.
Notes
You can use homemade beef broth for more flavor. Consider adding lemon juice before serving for a brighter taste.
