Ingredients

  • 1 lb beef (stew meat)
  • 1 cup barley
  • 4 cups beef broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green beans, chopped
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the beef cubes, browning them on all sides.
  2. Add the chopped onion and minced garlic to the pot; sauté for about 3-4 minutes until the onion is softened.
  3. Stir in the diced carrots, celery, and green beans; cook for another 3-5 minutes.
  4. Incorporate the barley, then pour in the beef broth, and sprinkle in the dried thyme, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover, and simmer for about 1 hour.
  6. Taste and adjust seasoning as needed.
  7. Serve hot, garnished with fresh parsley if desired.

You can use homemade beef broth for more flavor. Consider adding lemon juice before serving for a brighter taste.
