Description

A delightful fusion of flavors with tender ground beef, luscious cheeses, and a mouth-watering enchilada sauce layered between corn tortillas.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups red enchilada sauce
  • 8 corn tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. In a large skillet, heat over medium heat and cook the ground beef until browned. Drain any excess fat.
  2. Add in the diced onion and minced garlic, sautéing until softened.
  3. Sprinkle in chili powder, cumin, salt, and black pepper, stirring to coat the beef. Pour in 1 cup of the enchilada sauce and simmer for 5 minutes.
  4. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  5. Spread a thin layer of enchilada sauce on the bottom of the dish.
  6. Layer the corn tortillas, followed by the beef mixture, black beans, and both cheeses.
  7. Repeat layers until all ingredients are used, finishing with tortillas topped with sauce and cheese.
  8. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes until golden.
  9. Let rest for 10 minutes before slicing and garnish with fresh cilantro.

Notes

Consider adding toppings like sliced jalapeños or bell peppers for extra flavor. Use homemade enchilada sauce for a twist.
