Description

Crispy tostadas topped with seasoned black beans, creamy avocado, and melted pepper Jack cheese, perfect for a quick and delicious meal.

Ingredients

Scale
  • 2 (15 oz.) cans black beans, rinsed and drained
  • 1 tsp. kosher salt
  • 1/2 tsp. chili powder
  • 1/2 tsp. freshly ground black pepper
  • 1/2 tsp. ground cumin
  • 8 tostadas
  • 2 cups shredded pepper Jack cheese
  • Thinly sliced avocados and hot sauce, for serving

Instructions

  1. Preheat the Oven: Arrange a rack in the center of your oven; preheat to 350 degrees Fahrenheit.
  2. Prepare the Bean Mixture: In a small saucepan over medium heat, combine the rinsed black beans, kosher salt, chili powder, pepper, and ground cumin. Let these ingredients come to a gentle simmer, stirring occasionally until warmed through—about 10 minutes.
  3. Smash the Beans: Using a wooden spoon, gently smash the beans to your desired consistency, leaving some intact for texture. If needed, add a splash of water for a smoother mixture. Taste and adjust seasoning if necessary.
  4. Prepare Tostadas: While the beans are cooking, arrange the tostadas on a large baking sheet. Generously sprinkle each with shredded pepper Jack cheese.
  5. Bake: Slide the baking sheet into the oven and bake the tostadas for about 5 minutes, or until the cheese is gloriously melty.
  6. Assemble: Top the tostadas with the warm bean mixture and a few slices of creamy avocado. Drizzle them with your favorite hot sauce for that extra burst of flavor!

Notes

For a healthier option, use low-fat cheese or dairy-free alternatives. You can also add more veggies like diced tomatoes and onions for additional nutrients.
