Instructions
- Preheat oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and ¼ cup of granulated sugar until it resembles wet sand.
- Transfer the mixture into a 9-inch springform pan and press it down firmly.
- Bake the crust in the oven for 10 minutes, then remove and let cool.
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add remaining ¾ cup granulated sugar and vanilla extract; mix until fully incorporated.
- Add the eggs one at a time, mixing on low speed.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 45-50 minutes, until the center is set but slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- Chill in the refrigerator for at least 2 hours, preferably overnight.
- In a saucepan, combine mixed berries, powdered sugar, lemon juice, and cornstarch; cook over medium heat until thickened (5-7 minutes).
- Allow the berry mixture to cool to room temperature.
- Pour the cooled berry topping over the cheesecake and spread evenly.
- Chill for an additional 30 minutes before serving.
