Ingredients

  • 1 cup granulated sugar
  • 4 (8 oz) packages cream cheese, softened

  • 4 large eggs
  • 2 cups mixed berries (strawberries, raspberries, blueberries)
  • ½ cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • Fresh mint leaves (optional)
  • Chocolate shavings (optional)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and ¼ cup of granulated sugar until it resembles wet sand.
  3. Transfer the mixture into a 9-inch springform pan and press it down firmly.
  4. Bake the crust in the oven for 10 minutes, then remove and let cool.
  5. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  6. Add remaining ¾ cup granulated sugar and vanilla extract; mix until fully incorporated.
  7. Add the eggs one at a time, mixing on low speed.
  8. Pour the filling over the cooled crust and smooth the top.
  9. Bake for 45-50 minutes, until the center is set but slightly jiggly.
  10. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  11. Chill in the refrigerator for at least 2 hours, preferably overnight.
  12. In a saucepan, combine mixed berries, powdered sugar, lemon juice, and cornstarch; cook over medium heat until thickened (5-7 minutes).
  13. Allow the berry mixture to cool to room temperature.
  14. Pour the cooled berry topping over the cheesecake and spread evenly.
  15. Chill for an additional 30 minutes before serving.
