Description

A rustic dessert featuring a golden flaky crust and a luscious filling of juicy blueberries, brightened with a hint of lemon.


Ingredients

  • 1/4 cup fine cornmeal
  • 3 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/4 cup cold buttermilk
  • 4 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Coarse sugar (optional, for sprinkling)

Instructions

  1. Make the crust: In a medium bowl, whisk together the flour, cornmeal, sugar, and salt. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs. Stir in the buttermilk until combined, adding more if necessary. Shape into a ball, flatten into a disc, wrap in plastic, and refrigerate for at least 1 hour.
  2. Prepare the filling: In a large bowl, combine blueberries, sugar, cornstarch, lemon zest, and lemon juice. Stir gently and refrigerate until ready to use.
  3. Preheat the oven to 425°F (190°C) and line a baking sheet with parchment paper.
  4. Roll out the dough: On a floured surface, roll out the chilled dough into a 12-14 inch circle. Transfer to the baking sheet.
  5. Assemble the galette: Spoon the blueberry filling into the center, leaving a 2-3 inch border. Fold the edges of the dough over the filling, overlapping as needed, and press to seal. Brush with egg wash and sprinkle with coarse sugar.
  6. Bake: Bake for 28-32 minutes, until the filling is bubbly and the crust is golden brown. Allow to cool for 10 minutes before slicing. Serve warm.
