Description

Delightful Boo-Berry Pies with a sweet and tangy blueberry filling encapsulated in flaky pastry, perfect for Halloween celebrations.


Ingredients

Scale
  • 1/4 cup blueberry jam
  • 1 tsp. fresh lemon juice
  • 1/4 tsp. kosher salt
  • All-purpose flour, for dusting
  • 1 (14-oz.) pkg. pie dough
  • 1 large egg
  • 1/2 cup confectioners’ sugar
  • 1 Tbsp. fresh lemon juice (for icing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the blueberry jam, lemon juice, and salt until smooth.
  3. On a floured surface, roll out the pie dough. Use a ghost-shaped cookie cutter to create 12 ghost figures.
  4. Cut out 2 eyes and a mouth on half of the ghost shapes.
  5. Add 2 tsp of the jam mixture onto the center of the solid ghost shapes. Brush the edges with egg wash.
  6. Place the cut-out ghost shapes on top and crimp edges with a fork. Brush the tops with more egg wash.
  7. Bake for 10 to 12 minutes or until golden brown and let cool.
  8. Mix confectioners’ sugar with lemon juice and water for icing; spread over the cooled pies.

Notes

Serve with vanilla ice cream or whipped cream for an extra treat. Ensure to not overbake to maintain a flaky crust.
