Ingredients

Scale
  • 1 large cauliflower head
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 1/4 cup hot sauce
  • 2 tablespoons melted vegan butter
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon maple syrup
  • Vegan ranch dressing or blue cheese crumbles (for serving)
  • Celery sticks (for serving)
  • Carrot sticks (for serving)
  • Fresh chopped parsley or chives (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and dry the cauliflower, trimming the leaves and stem while keeping the core intact.
  3. Slice the cauliflower into 1 to 1.5 inch thick steaks.
  4. Mix olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper in a small bowl.
  5. Brush both sides of the steaks with the seasoning mix and place on a parchment-lined baking sheet.
  6. Roast in the oven for 20–25 minutes, flipping halfway through.
  7. While roasting, combine hot sauce, melted vegan butter, apple cider vinegar, and maple syrup in a saucepan over low heat.
  8. Remove the cauliflower from the oven and brush generously with buffalo sauce. Return to oven for another 5–10 minutes.
  9. Serve hot with ranch dressing or blue cheese, celery and carrot sticks, and fresh herbs.

Notes

For a milder dish, reduce the cayenne pepper and hot sauce. Store leftovers in an airtight container for up to 3 days.
