- 1 large cauliflower head
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
- 1/4 cup hot sauce
- 2 tablespoons melted vegan butter
- 1 tablespoon apple cider vinegar
- 1 teaspoon maple syrup
- Vegan ranch dressing or blue cheese crumbles (for serving)
- Celery sticks (for serving)
- Carrot sticks (for serving)
- Fresh chopped parsley or chives (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and dry the cauliflower, trimming the leaves and stem while keeping the core intact.
- Slice the cauliflower into 1 to 1.5 inch thick steaks.
- Mix olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper in a small bowl.
- Brush both sides of the steaks with the seasoning mix and place on a parchment-lined baking sheet.
- Roast in the oven for 20–25 minutes, flipping halfway through.
- While roasting, combine hot sauce, melted vegan butter, apple cider vinegar, and maple syrup in a saucepan over low heat.
- Remove the cauliflower from the oven and brush generously with buffalo sauce. Return to oven for another 5–10 minutes.
- Serve hot with ranch dressing or blue cheese, celery and carrot sticks, and fresh herbs.
Notes
For a milder dish, reduce the cayenne pepper and hot sauce. Store leftovers in an airtight container for up to 3 days.
