Description

A vibrant and refreshing salad combining crunchy cabbage, hearty black beans, and sweet corn, topped with a zesty lime dressing.


Ingredients

  • 2 cups crunchy cabbage, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn, cooked or canned
  • 1 cup Chili Cheese Fritos
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chipotle powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped cabbage, black beans, and corn. Mix well.
  2. In a small bowl, whisk together the lime juice, olive oil, chipotle powder, salt, and pepper.
  3. Pour the dressing over the salad mixture and toss gently.
  4. Just before serving, add the Chili Cheese Fritos to the salad.
  5. Enjoy immediately for the best texture and flavor.

Notes

Customize the salad by trying different flavored tortilla chips. It can be made a few hours in advance; just add the Fritos right before serving.
