  • 4 boneless skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 16 ounces elbow macaroni (cooked al dente, drained)
  • 1 stick (113 g) unsalted butter
  • 1/2 cup (65 g) all-purpose flour
  • 3 cups (735 g) whole milk (warmed)
  • 2 teaspoons kosher salt
  • 1 tablespoon Cajun seasoning
  • 1 cup (113 g) sharp cheddar cheese (freshly grated)
  • 1/2 cup (565 g) mozzarella cheese (freshly grated)
  • 1 medium tomato (diced)
  • Salt and pepper to taste
  • Chopped parsley (for garnish)

Instructions

  1. Season and sear the chicken breasts with Cajun seasoning. In a skillet over medium heat, add olive oil and cook chicken for 5 minutes on each side until the internal temperature reaches 165°F. Set aside and slice.
  2. In another saucepan, melt butter over medium heat. Whisk in flour until light golden brown. Gradually add warmed milk while whisking until thickened. Stir in Cajun seasoning and freshly grated cheeses until melted.
  3. Pour sauce over cooked elbow macaroni, add diced tomatoes, and mix well. Top with sliced Cajun chicken.
  4. Season with salt and pepper and garnish with chopped parsley. Serve immediately.

Notes

Adjust the Cajun seasoning for more heat and substitute with low-fat ingredients for a healthier alternative.
