- 10 ounces fettuccini
- 1 pound large shrimp, peeled and deveined
- Kosher salt to taste
- Black pepper to taste
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon dried oregano
- 2 tablespoons olive oil
- 6 ounces andouille sausage or smoked sausage, thinly sliced
- 3 tablespoons olive oil for sautéing
- 1 small zucchini, halved lengthwise and sliced thin
- 1 yellow onion, diced
- 2 red bell peppers, cut into 1 inch chunks
- 2–3 tablespoons Cajun seasoning
- 1 teaspoon brown sugar
- 2 cloves garlic, minced
- 1/2 cup crushed tomatoes
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup parmesan cheese
- Fresh chopped parsley (optional)
Instructions
- Boil the Pasta: Add pasta to a large pot of boiling salted water. Cook to al dente (about 8-10 minutes), then drain and set aside.
- Season the Shrimp: In a bowl, toss shrimp with salt, pepper, and 1 teaspoon of Cajun seasoning. Heat a large skillet over medium-high heat and drizzle olive oil in the pan. When hot, add shrimp and cook for about 2 minutes. Flip and cook an additional minute, until they turn pink and firm. Remove from pan and set aside.
- Cook the Sausage: In the same skillet, add sliced sausage. Cook until lightly browned on both sides (about 3-4 minutes). Remove and set aside.
- Sauté the Vegetables: Lower heat, then add 3 tablespoons olive oil to the same pan. Add chopped zucchini, onion, red peppers, remaining Cajun seasoning, and brown sugar. Toss to coat, cooking until veggies are soft (3-5 minutes).
- Combine the Sauces: Add minced garlic, letting it sauté for 30 seconds. Then stir in crushed tomatoes, chicken broth, and heavy cream. Bring to a simmer, stirring continuously to release the flavors stuck to the pan. Allow to simmer for 5 minutes.
- Bring it All Together: Add in parmesan, cooked pasta, shrimp, and sausage. Fold everything together gently and let simmer until heated through (another 2-3 minutes). Serve garnished with fresh chopped parsley for a splash of color.
Notes
For a lighter version, substitute heavy cream with coconut cream and use whole wheat fettuccini for more fiber.
