Description

A delicious Caprese Chicken Sandwich featuring juicy chicken, tangy pesto, fresh grape tomatoes, and creamy mozzarella, ideal for a quick lunch or dinner.


Ingredients

  • 8 ounces boneless skinless chicken breast or 11¼ cups cubed cooked chicken
  • Salt and Pepper
  • Onion Powder
  • Garlic Powder
  • 1 cup halved grape tomatoes
  • 3/4 cup pearl-sized fresh mozzarella balls
  • 5 tablespoons basil pesto
  • 1/4 cup mayonnaise
  • 4 hoagie rolls
  • Fresh basil leaves

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Season the chicken with salt, pepper, onion powder, and garlic powder.
  4. Place the seasoned chicken on the baking sheet.
  5. Bake for 10-20 minutes, until the internal temperature reaches 165 degrees F.
  6. Let the chicken rest for 5 minutes.
  7. Cut the chicken into bite-sized pieces.
  8. In a mixing bowl, combine the cubed chicken, grape tomatoes, and mozzarella.
  9. Toss with 2 tablespoons of basil pesto.
  10. Toast the hoagie rolls.
  11. Mix mayonnaise with the remaining pesto.
  12. Spread the mayo-pesto mixture inside the toasted rolls.
  13. Fill the rolls with the chicken mixture and garnish with fresh basil leaves.
