Description

A whimsical twist on chicken tenders, breaded with Captain Crunch cereal for a nostalgic, crunchy delight.


Ingredients

  • 3 cups Cap’n Crunch cereal
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon pepper
  • 1 large egg
  • 1 tablespoon water
  • 1 pound chicken breast tenderloins or boneless skinless chicken breasts cut into strips
  • 1 tablespoon canola oil or vegetable oil
  • 1 tablespoon unsalted butter
  • Kosher salt to season cooked chicken

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Add the Cap’n Crunch cereal to a large zipper-top bag and crush it until it resembles coarse crumbs.
  3. In a shallow dish, combine flour, onion powder, garlic powder, salt, and pepper.
  4. In another shallow dish, whisk together the egg and water.
  5. Dip each piece of chicken into the flour mixture, then into the egg wash, and finally roll it in the crushed cereal.
  6. Heat a large skillet over medium heat with oil and butter, then cook the chicken for 2-3 minutes per side until golden-brown.
  7. Transfer the chicken tenders to a sheet pan and bake for 10-20 minutes until the internal temperature reaches 165°F.
  8. Sprinkle with Kosher salt before serving and pair with your favorite dipping sauce.

Notes

For a lighter version, use low-sugar cereal and bake instead of frying.
