- 3 cups Cap’n Crunch cereal
- 1/2 cup all-purpose flour
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon pepper
- 1 large egg
- 1 tablespoon water
- 1 pound chicken breast tenderloins or boneless skinless chicken breasts cut into strips
- 1 tablespoon canola oil or vegetable oil
- 1 tablespoon unsalted butter
- Kosher salt to season cooked chicken
Instructions
- Preheat the oven to 400°F (200°C).
- Add the Cap’n Crunch cereal to a large zipper-top bag and crush it until it resembles coarse crumbs.
- In a shallow dish, combine flour, onion powder, garlic powder, salt, and pepper.
- In another shallow dish, whisk together the egg and water.
- Dip each piece of chicken into the flour mixture, then into the egg wash, and finally roll it in the crushed cereal.
- Heat a large skillet over medium heat with oil and butter, then cook the chicken for 2-3 minutes per side until golden-brown.
- Transfer the chicken tenders to a sheet pan and bake for 10-20 minutes until the internal temperature reaches 165°F.
- Sprinkle with Kosher salt before serving and pair with your favorite dipping sauce.
Notes
For a lighter version, use low-sugar cereal and bake instead of frying.
