- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups chopped apples (preferably tart)
- 1 cup caramel sauce
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking pan.
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Stir until well mixed.
- Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat together cream cheese, 1 cup sugar, and vanilla until smooth.
- Add the eggs, one at a time, mixing well after each addition.
- Fold in the chopped apples and cinnamon.
- Pour the cheesecake mixture over the crust. Spread it evenly.
- Drizzle caramel sauce on top and swirl with a knife.
- Bake for 30-35 minutes until edges are set and the center has a slight wobble.
- Allow to cool, then refrigerate for at least 2 hours before cutting into bars.
Notes
For best results, use tart apples like Granny Smith and allow the bars to chill to set properly.
