Description

A warm, gooey caramel apple upside down cake that creates nostalgic flavors of childhood and family gatherings.


Ingredients

  • 6 Tablespoons unsalted butter (melted)
  • 1/2 cup packed light or dark brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon pure vanilla extract
  • 2 medium apples, peeled and sliced into 1/4 inch slices
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed light or dark brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 6 Tablespoons whole milk, at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small saucepan over medium heat, combine the melted butter and brown sugar; whisk until melted and combined.
  3. Remove from heat and whisk in ground cinnamon and vanilla extract.
  4. Pour this mixture into an ungreased pie dish and arrange apple slices on top, then refrigerate.
  5. In a separate bowl, whisk together flour, baking powder, ground cinnamon, ground nutmeg, and salt.
  6. In a mixing bowl, beat softened butter and gradually add granulated and brown sugars until light and fluffy.
  7. Beat in eggs and vanilla extract until well combined.
  8. Gradually add dry ingredients to wet mixture, alternating with whole milk, until just combined.
  9. Pour and spread the cake batter evenly over the apple slices.
  10. Bake for 40–46 minutes, tenting with foil halfway through, until a toothpick comes out mostly clean.
  11. Cool for 15 minutes, then invert onto a serving plate.

Notes

Serve warm, preferably with vanilla ice cream or cream on the side. Store leftovers in the refrigerator for up to three days.
