A warm, gooey caramel apple upside down cake that creates nostalgic flavors of childhood and family gatherings.

- 6 Tablespoons unsalted butter (melted)
- 1/2 cup packed light or dark brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon pure vanilla extract
- 2 medium apples, peeled and sliced into 1/4 inch slices
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened to room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed light or dark brown sugar
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 6 Tablespoons whole milk, at room temperature
Instructions
- Preheat your oven to 350°F (175°C).
- In a small saucepan over medium heat, combine the melted butter and brown sugar; whisk until melted and combined.
- Remove from heat and whisk in ground cinnamon and vanilla extract.
- Pour this mixture into an ungreased pie dish and arrange apple slices on top, then refrigerate.
- In a separate bowl, whisk together flour, baking powder, ground cinnamon, ground nutmeg, and salt.
- In a mixing bowl, beat softened butter and gradually add granulated and brown sugars until light and fluffy.
- Beat in eggs and vanilla extract until well combined.
- Gradually add dry ingredients to wet mixture, alternating with whole milk, until just combined.
- Pour and spread the cake batter evenly over the apple slices.
- Bake for 40–46 minutes, tenting with foil halfway through, until a toothpick comes out mostly clean.
- Cool for 15 minutes, then invert onto a serving plate.
Notes
Serve warm, preferably with vanilla ice cream or cream on the side. Store leftovers in the refrigerator for up to three days.
