  • 1 cup Heavy Cream
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1 cup Whole-Milk Ricotta
  • 1 cup Low-Moisture Mozzarella
  • 1/2 cup Parmesan Cheese
  • 1 large Egg
  • 1 cup All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Garlic Powder
  • 2 tablespoons Fresh Parsley, chopped

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped yellow onion and sauté until translucent, approximately 5-7 minutes.
  2. Stir in the minced garlic, tomato paste, and red pepper flakes; cook for 1-2 minutes to marry the flavors.
  3. Pour in the crushed tomatoes and broth, add sugar and dried basil. Bring to a gentle boil, then reduce to a simmer for 10-15 minutes.
  4. Blend the soup to your desired consistency, then stir in the heavy cream. Season with salt and black pepper to taste.
  5. In a bowl, mix ricotta, mozzarella, Parmesan, and egg. Gradually add flour, baking powder, and garlic powder until thick batter forms. Fold in parsley.
  6. Scoop spoonfuls of dumpling batter into the simmering soup. Cover and cook for 6-8 minutes until dumplings are fluffy and cooked through.
  7. Taste the soup to adjust seasoning, then ladle into bowls and top with extra grated Parmesan and a drizzle of olive oil.
