  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups chocolate chunks or chips

Instructions

  1. Prepare the Cheesecake Filling: In a medium bowl, beat together the softened cream cheese, granulated sugar, egg, vanilla extract, and optional sour cream or Greek yogurt until smooth and creamy.
  2. Make the Cookie Dough: In a large bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy. Beat in the eggs and vanilla extract. Gradually add the flour, baking soda, and salt; mix until just combined. Fold in the chocolate chunks.
  3. Form the Cookies: Divide the cookie dough into small balls, flatten each slightly, and place a spoonful of cheesecake filling in the center. Wrap the dough around the filling and seal it completely.
  4. Bake the Cookies: Arrange the stuffed cookies on a parchment-lined baking sheet. Bake at 350°F (175°C) for about 12 to 15 minutes until edges are golden. Let them cool slightly before serving.

Notes
