  • 1 32-ounce bag frozen potato tots
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet over medium heat, add olive oil.
  3. Stir in chopped onion and diced carrots; cook until softened, about 5–6 minutes.
  4. Add minced garlic and sauté for 1 minute more.
  5. Incorporate ground beef, cooking until brown, about 8 minutes while breaking it up with a spoon.
  6. Mix in tomato paste, Worcestershire sauce, dried thyme, salt, and pepper, cooking for an additional 1–2 minutes.
  7. Sprinkle flour over the beef mixture, stirring well to evenly combine.
  8. Slowly introduce beef broth, stirring constantly until it starts to thicken, about 5 minutes.
  9. Fold in frozen peas, cooking for an additional 2 minutes, then remove from heat.
  10. Transfer the meat mixture into a greased 9×13-inch baking dish, spreading it out evenly.
  11. Generously sprinkle the casserole with shredded cheddar cheese.
  12. Arrange frozen potato tots on top in a single, uniform layer.
  13. Bake for 25–30 minutes, or until the tots are golden and crispy.
  14. Garnish with fresh parsley if desired, and serve hot.
