- 1 large cauliflower head
- Ghee or avocado oil cooking spray
- 1 tablespoon avocado oil or extra virgin olive oil
- 8 ounces fresh button mushrooms, sliced
- 2 fresh garlic cloves, minced
- 1 tablespoon dry Italian seasonings
- Sea salt, to taste
- Fresh ground black pepper, to taste
- 1 cup shredded mozzarella cheese
- Fresh thyme, to garnish
Instructions
- Preheat your oven to 400°F and spray baking sheets with cooking spray.
- Slice the cauliflower head into ¾-inch thick steaks and arrange on the baking sheets.
- Brush each side with avocado oil and season with salt, pepper, and Italian seasonings.
- Roast for 20 to 25 minutes, flipping halfway through.
- In a bowl, mix mushrooms with garlic, salt, and pepper.
- Spread the mushroom mixture on a separate baking sheet and bake for 10 to 15 minutes, or sauté for 5 to 6 minutes.
- Top roasted cauliflower with mozzarella and mushroom mixture, then return to the oven for 2 to 3 minutes until cheese melts.
- Garnish with fresh thyme and serve immediately.
Notes
Experiment with different vegetables or spices for variety. Avoid overcrowding the baking sheet for even cooking.
