Description

A delightful dish featuring roasted cauliflower steaks topped with savory sautéed mushrooms and melted mozzarella cheese.


Ingredients

  • 1 large cauliflower head
  • Ghee or avocado oil cooking spray
  • 1 tablespoon avocado oil or extra virgin olive oil
  • 8 ounces fresh button mushrooms, sliced
  • 2 fresh garlic cloves, minced
  • 1 tablespoon dry Italian seasonings
  • Sea salt, to taste
  • Fresh ground black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • Fresh thyme, to garnish

Instructions

  1. Preheat your oven to 400°F and spray baking sheets with cooking spray.
  2. Slice the cauliflower head into ¾-inch thick steaks and arrange on the baking sheets.
  3. Brush each side with avocado oil and season with salt, pepper, and Italian seasonings.
  4. Roast for 20 to 25 minutes, flipping halfway through.
  5. In a bowl, mix mushrooms with garlic, salt, and pepper.
  6. Spread the mushroom mixture on a separate baking sheet and bake for 10 to 15 minutes, or sauté for 5 to 6 minutes.
  7. Top roasted cauliflower with mozzarella and mushroom mixture, then return to the oven for 2 to 3 minutes until cheese melts.
  8. Garnish with fresh thyme and serve immediately.

Notes

Experiment with different vegetables or spices for variety. Avoid overcrowding the baking sheet for even cooking.
