- 6 ears fresh corn on the cob
- 2 tablespoons olive oil
- 6 tablespoons unsalted butter
- 4 cloves garlic, finely minced
- 1 tablespoon fresh parsley, chopped or 1 teaspoon dried parsley
- 1/2 teaspoon paprika
- Salt, to taste
- Black pepper, to taste
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1/4 teaspoon crushed red pepper flakes
- Additional parsley, chopped, for garnish
Instructions
- Remove the husks and silks from each ear of corn, rinse under cold water, and pat dry.
- If you prefer a softer texture, boil the corn in salted water for 4 to 5 minutes, then drain. For firmer corn, proceed to grilling or roasting.
- Melt the unsalted butter in a small saucepan over low heat or in a microwave-safe bowl. Stir in garlic, parsley, paprika, salt, and black pepper.
- Brush each ear of corn generously with the garlic butter mixture, reserving about 2 tablespoons for later.
- Preheat oven to 400°F (200°C) and arrange the buttered corn on a foil-lined baking sheet. Roast for 15 minutes, turning halfway through.
- After 15 minutes, sprinkle the mozzarella and Parmesan over the corn and return to the oven for an additional 5 minutes to melt the cheese.
- For grilling, preheat the grill to medium heat and cook the corn for 10 to 12 minutes, rotating occasionally. Add the cheeses for the last 2 to 3 minutes.
- For stovetop, heat a cast-iron skillet over medium-high heat, sear corn for about 10 minutes, then add cheese for the last minute to melt.
- Transfer the corn to a serving platter, drizzle with reserved garlic butter, and garnish with parsley and red pepper flakes. Serve hot.
