- 2 tablespoons extra virgin olive oil
- 1.5 lbs chicken breast, thinly sliced
- 5 garlic cloves, minced
- 1 sweet onion, sliced into half moons
- 1 red bell pepper, julienned
- 2 cups fresh spinach
- 1 teaspoon Mediterranean herb blend
- 0.5 teaspoon smoked paprika
- A pinch of chili flakes (optional)
- Sea salt and black pepper to taste
- 1.5 cups shredded mozzarella
- 0.5 cup sharp cheddar, shredded
- 3 tablespoons cream cheese, softened
- 2 tablespoons sour cream
- 2 teaspoons chopped fresh chives
- 6 large flour tortillas
- 1.5 tablespoons melted butter
- 0.75 teaspoon roasted garlic powder
- Olive oil cooking spray
Instructions
- Heat olive oil in a skillet over medium-high heat. Season sliced chicken with salt and pepper, then sear for 3–4 minutes per side until golden. Remove and keep warm.
- In the same skillet, add the onion and cook for 2 minutes. Add garlic, spices, and optional chili flakes; stir well. Add bell pepper and cook until soft but crisp. Return the chicken to the skillet, then fold in spinach and cook until just wilted. Remove from heat.
- In a bowl, combine mozzarella, cheddar, cream cheese, sour cream, and chives; reserve 1/3 for sprinkling later.
- Mix melted butter and garlic powder to brush one side of each tortilla (buttered side down).
- Spread 2 tablespoons of the cheese blend on the center of each tortilla, add the chicken mixture, and sprinkle with reserved cheese. Fold and roll tightly.
- Heat a dry skillet over medium heat and grill wraps seam side down for 2–3 minutes per side until golden and crisp. Serve warm.
Notes
For a healthier option, consider using low-sugar tortillas and adding more veggies.
