- 4 large potatoes, peeled and diced
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 large flour tortillas
- Olive oil for cooking
Instructions
- Boil the diced potatoes in a pot of salted water until fork-tender, then drain and mash in a mixing bowl.
- Stir in shredded cheese, sour cream, garlic powder, onion powder, and season with salt and pepper.
- Lay out each tortilla, place a portion of the potato mixture in the center, and roll tightly.
- Heat a skillet over medium heat with olive oil and cook burritos seam-side down for 3-4 minutes on each side until golden brown.
- Serve warm and enjoy!
