- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (e.g., mozzarella or parmesan)
- Fresh basil for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Once hot, add the diced onions and sauté until they become translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Pour in the can of diced tomatoes along with the vegetable broth. Bring the mixture to a gentle simmer.
- Stir in the tortellini, cooking according to the package instructions until tender (3-5 minutes).
- Once the tortellini are cooked, lower the heat and add the heavy cream and Italian seasoning. Mix well.
- Add salt and pepper to taste.
- Remove the pot from heat and stir in the shredded cheese until it melts.
- Ladle the soup into bowls and garnish with fresh basil before serving hot.
Notes
For added flavor, use freshly shredded cheese and consider adding a pinch of red pepper flakes for spice.
