Ingredients

  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (e.g., mozzarella or parmesan)
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Once hot, add the diced onions and sauté until they become translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the can of diced tomatoes along with the vegetable broth. Bring the mixture to a gentle simmer.
  4. Stir in the tortellini, cooking according to the package instructions until tender (3-5 minutes).
  5. Once the tortellini are cooked, lower the heat and add the heavy cream and Italian seasoning. Mix well.
  6. Add salt and pepper to taste.
  7. Remove the pot from heat and stir in the shredded cheese until it melts.
