Description

A moist and delicious bread filled with sweet cherries and the nutty essence of almonds, perfect for breakfast or dessert.


Ingredients

  • 1 cup Greek Yogurt
  • 1 cup Buttermilk
  • 2 cups Fresh or Canned Cherries, pitted
  • 1/2 teaspoon Almond Extract
  • 1/2 cup Sliced Almonds
  • 2 1/2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1/2 cup Butter, melted

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with parchment paper.
  2. In a large bowl, whisk the eggs until foamy, then stream in melted butter and mix in Greek yogurt, buttermilk, and almond extract.
  3. Sift together flour, baking powder, and salt in a separate bowl, then fold into the wet mixture.
  4. Toss cherries with cornstarch and gently fold into the batter along with sliced almonds.
  5. Transfer the batter to the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
  6. Allow to cool in the pan for 15 minutes, then cool completely on a wire rack.

Notes

For a gluten-free option, substitute with a gluten-free flour mix. Can use frozen cherries if thawed and patted dry.
