- 1 cup Greek Yogurt
- 1 cup Buttermilk
- 2 cups Fresh or Canned Cherries, pitted
- 1/2 teaspoon Almond Extract
- 1/2 cup Sliced Almonds
- 2 1/2 cups All-Purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 2 Eggs
- 1/2 cup Butter, melted
Instructions
- Preheat the oven to 350°F and prepare a loaf pan with parchment paper.
- In a large bowl, whisk the eggs until foamy, then stream in melted butter and mix in Greek yogurt, buttermilk, and almond extract.
- Sift together flour, baking powder, and salt in a separate bowl, then fold into the wet mixture.
- Toss cherries with cornstarch and gently fold into the batter along with sliced almonds.
- Transfer the batter to the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
- Allow to cool in the pan for 15 minutes, then cool completely on a wire rack.
Notes
For a gluten-free option, substitute with a gluten-free flour mix. Can use frozen cherries if thawed and patted dry.
