- 1/2 cup cream cheese, softened
- 3 cups milk

- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Cook the elbow macaroni according to package instructions. Drain and set aside.
- In a medium-sized saucepan over medium heat, melt the butter. Stir in the flour to create a roux, cooking for 1-2 minutes.
- Gradually whisk in the milk, stirring constantly until the mixture thickens.
- Add softened cream cheese and stir until melted. Then add cheddar and Monterey Jack cheese, stirring until smooth. Season with garlic powder, onion powder, salt, and pepper.
- Fold the cheese sauce into the cooked macaroni until well-coated.
- For a crunchy topping, pour the mixture into a baking dish, sprinkle with breadcrumbs, and bake at 350°F for 20-25 minutes.
- Once baked, let cool slightly and serve warm.

Consider adding smoked paprika or hot sauce for extra flavor. You can mix in cooked chicken or bacon for a protein boost.
