- 1 ripe avocado
- 1 cup shredded cheddar and mozzarella cheese blend
- 4 slices whole wheat or sourdough bread
- 2 tablespoons olive oil

Instructions
- Season the chicken breasts with salt, pepper, and garlic powder evenly.
- Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the seasoned chicken for about 6 minutes on each side until golden brown. Remove from skillet and let rest before slicing.
- Assemble the sandwich with a slice of bread, avocado, chicken strips, and cheese blend, topping with another slice of bread.
- Grill the sandwich in the skillet with the remaining olive oil for 3 to 4 minutes on each side until the bread is golden brown and cheese is melted.
- Let cool slightly, slice in half, and serve warm.
