Description

A delectable fusion of juicy chicken, creamy avocado, and melted cheese layered between crispy bread, perfect for family gatherings or a cozy night in.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or any preferred choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  1. Season the chicken breasts with salt and pepper. In a skillet over medium-high heat, add olive oil. Once hot, cook the chicken for 6-7 minutes on each side until thoroughly cooked. Let it rest and slice into strips.
  2. While the chicken rests, slice the avocado and prepare your cheese slices.
  3. Spread mayonnaise and Dijon mustard on one side of each bread slice.
  4. Layer two bread slices (mayonnaise side up) with chicken, avocado, cheese, red onion, and tomato. Top with remaining bread slices (mayo side down).
  5. In the same skillet, heat butter or olive oil over medium heat. Grill sandwiches for 3-4 minutes on each side until golden brown and the cheese has melted.
  6. Slice sandwiches in half and serve warm.

Notes

Use leftover rotisserie chicken to save time or try different types of cheese and bread variations.
