- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 4 slices of bread (sourdough, ciabatta, or any preferred choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling
Instructions
- Season the chicken breasts with salt and pepper. In a skillet over medium-high heat, add olive oil. Once hot, cook the chicken for 6-7 minutes on each side until thoroughly cooked. Let it rest and slice into strips.
- While the chicken rests, slice the avocado and prepare your cheese slices.
- Spread mayonnaise and Dijon mustard on one side of each bread slice.
- Layer two bread slices (mayonnaise side up) with chicken, avocado, cheese, red onion, and tomato. Top with remaining bread slices (mayo side down).
- In the same skillet, heat butter or olive oil over medium heat. Grill sandwiches for 3-4 minutes on each side until golden brown and the cheese has melted.
- Slice sandwiches in half and serve warm.
Notes
Use leftover rotisserie chicken to save time or try different types of cheese and bread variations.
