Description

Delicious and quick Chicken Fajitas, featuring tender chicken, vibrant bell peppers, and warm corn tortillas, perfect for a festive dinner.


Ingredients

  • 1/4 cup lime juice (from about 3 limes)
  • 2 tsp. chili powder
  • 1/2 tsp. crushed red pepper flakes
  • 1/4 cup plus 1 Tbsp. neutral oil
  • 2 tsp. ground cumin, divided
  • 1 lb. boneless, skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 2 bell peppers, seeds and ribs removed, thinly sliced
  • 1 large yellow onion, thinly sliced
  • Corn tortillas, warmed
  • Lime wedges for serving

Instructions

  1. In a large bowl, whisk together the lime juice, chili powder, red pepper flakes, 1/4 cup of oil, and 1 tsp. of cumin. Season chicken breasts with salt and pepper, then marinate in the mixture for at least 30 minutes, or up to 2 hours.
  2. In a large skillet over medium heat, warm the remaining 1 Tbsp. of oil. Add the marinated chicken and cook until golden brown, about 8 minutes per side. Check the internal temperature to reach 160°F, then remove and let rest for 10 minutes before slicing.
  3. Add bell peppers and onion to the same skillet, along with the remaining 1 tsp. of cumin, salt, and pepper. Cook for about 7 minutes until softened.
  4. Return the sliced chicken to the skillet and mix until combined. Serve with warmed corn tortillas and lime wedges.

Notes

To lighten the recipe, opt for low-sugar marinades or swap toppings. Leftovers can be stored in airtight containers for up to three days.
