- 1/4 cup lime juice (from about 3 limes)
- 2 tsp. chili powder
- 1/2 tsp. crushed red pepper flakes
- 1/4 cup plus 1 Tbsp. neutral oil
- 2 tsp. ground cumin, divided
- 1 lb. boneless, skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 2 bell peppers, seeds and ribs removed, thinly sliced
- 1 large yellow onion, thinly sliced
- Corn tortillas, warmed
- Lime wedges for serving
Instructions
- In a large bowl, whisk together the lime juice, chili powder, red pepper flakes, 1/4 cup of oil, and 1 tsp. of cumin. Season chicken breasts with salt and pepper, then marinate in the mixture for at least 30 minutes, or up to 2 hours.
- In a large skillet over medium heat, warm the remaining 1 Tbsp. of oil. Add the marinated chicken and cook until golden brown, about 8 minutes per side. Check the internal temperature to reach 160°F, then remove and let rest for 10 minutes before slicing.
- Add bell peppers and onion to the same skillet, along with the remaining 1 tsp. of cumin, salt, and pepper. Cook for about 7 minutes until softened.
- Return the sliced chicken to the skillet and mix until combined. Serve with warmed corn tortillas and lime wedges.
Notes
To lighten the recipe, opt for low-sugar marinades or swap toppings. Leftovers can be stored in airtight containers for up to three days.
