Description

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 cup frozen peas
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Rice (for serving)

Instructions

  1. In a large pot, bring salted water to a boil. Add the chicken pieces and cook until done, about 30-40 minutes. Remove chicken and reserve the broth.
  2. Melt butter over medium heat in the same pot. Sauté onion and carrots for about 5 minutes.
  3. Sprinkle flour into the pot and stir to create a roux. Gradually whisk in the reserved chicken broth until smooth.
  4. Stir in heavy cream and frozen peas, bringing the mixture to a gentle simmer.
  5. Shred the cooked chicken and add it back to the pot. Season with salt and pepper, stirring to combine.
  6. Serve hot over rice, garnished with fresh parsley.

Notes

For extra flavor, brown the chicken before boiling. You can add mushrooms or herbs for variation.
