- 1 onion, chopped
- 2 carrots, diced
- 1 cup frozen peas
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Rice (for serving)
Instructions
- In a large pot, bring salted water to a boil. Add the chicken pieces and cook until done, about 30-40 minutes. Remove chicken and reserve the broth.
- Melt butter over medium heat in the same pot. Sauté onion and carrots for about 5 minutes.
- Sprinkle flour into the pot and stir to create a roux. Gradually whisk in the reserved chicken broth until smooth.
- Stir in heavy cream and frozen peas, bringing the mixture to a gentle simmer.
- Shred the cooked chicken and add it back to the pot. Season with salt and pepper, stirring to combine.
- Serve hot over rice, garnished with fresh parsley.
Notes
For extra flavor, brown the chicken before boiling. You can add mushrooms or herbs for variation.
