Ingredients

  • 1 packet active dry yeast

  • 4 large eggs

  • 10 tbsp unsalted butter, melted
  • 3/4 cup semi-sweet chocolate chips
  • 1 1/2 cups whole milk (for custard)
  • 1/2 cup granulated sugar (for custard)
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter (for custard)
  • 1 egg (for egg wash)
  • 2 tbsp milk (for egg wash)
  • Chocolate chips (for garnish)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the custard by whisking together the egg yolks, granulated sugar, and cornstarch in a saucepan. Gradually add in 1 1/2 cups of whole milk while whisking continuously. Cook over medium heat until thick, then stir in vanilla and 2 tbsp of butter. Cool with plastic wrap on the surface.
  2. Activate the yeast by mixing lukewarm milk with a teaspoon of sugar and sprinkling yeast on top. Let sit until foamy (5-10 minutes).
  3. Mix the dough by combining flour, remaining sugar, and salt in a stand mixer. Add eggs and foamy yeast mixture. Knead and gradually add melted butter until smooth and elastic (8-10 minutes).
  4. Let the dough rise in a greased bowl, covered, for 1.5 to 2 hours, or refrigerate overnight.
  5. Incorporate chocolate chips into the risen dough, divide into 12 pieces, roll into balls, place in greased muffin tins, and let proof for another 45-60 minutes.
  6. Preheat oven to 350°F (175°C). Brush dough with egg wash. Bake for 20-25 minutes until golden brown.
  7. Cool slightly, pierce a hole in each brioche, and fill with cooled custard.
  8. Dust with powdered sugar and garnish with chocolate chips.

Notes

Letting the dough rise overnight enhances flavor and texture. Experiment with different chocolates or nuts for creative variations.
