- 1 1/2 cups whole milk (for custard)

- 1/4 cup cornstarch
- 4 large egg yolks
- 1 tsp vanilla extract
- 2 tbsp unsalted butter (for custard)
- 1 egg (for egg wash)
- 2 tbsp milk (for egg wash)
- Chocolate chips (for garnish)
- Powdered sugar (for dusting)
Instructions
- Prepare the custard by whisking together the egg yolks, granulated sugar, and cornstarch in a saucepan. Gradually add in 1 1/2 cups of whole milk while whisking continuously. Cook over medium heat until thick, then stir in vanilla and 2 tbsp of butter. Cool with plastic wrap on the surface.
- Activate the yeast by mixing lukewarm milk with a teaspoon of sugar and sprinkling yeast on top. Let sit until foamy (5-10 minutes).
- Mix the dough by combining flour, remaining sugar, and salt in a stand mixer. Add eggs and foamy yeast mixture. Knead and gradually add melted butter until smooth and elastic (8-10 minutes).
- Let the dough rise in a greased bowl, covered, for 1.5 to 2 hours, or refrigerate overnight.
- Incorporate chocolate chips into the risen dough, divide into 12 pieces, roll into balls, place in greased muffin tins, and let proof for another 45-60 minutes.
- Preheat oven to 350°F (175°C). Brush dough with egg wash. Bake for 20-25 minutes until golden brown.
- Cool slightly, pierce a hole in each brioche, and fill with cooled custard.
- Dust with powdered sugar and garnish with chocolate chips.
