Description

A delightful fusion of sweet, fluffy brioche and velvety vanilla custard, studded with mini chocolate chips.


Ingredients

Scale
  • 2 cups plus 1 tablespoon all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 10 grams fresh yeast, crumbled
  • 3 large eggs, beaten
  • 2/3 cup unsalted butter, softened and diced
  • 1 cup plus 2 teaspoons whole milk
  • 1 teaspoon unsalted butter (for cooking)
  • 1 vanilla bean, split and seeds scraped
  • 2 egg yolks
  • 1/4 cup granulated sugar (for custard)
  • 3 tablespoons cornstarch
  • 1 tablespoon all-purpose flour (for custard)
  • 3/4 cup mini chocolate chips
  • 1/4 cup granulated sugar (for syrup)
  • 1/4 cup water
  • 1 large egg and 1 egg yolk, beaten (for brushing)

Instructions

  1. In a stand mixer bowl, combine flour, granulated sugar, salt, and fresh yeast. Mix briefly.
  2. Add beaten eggs and knead at medium speed for about 3 minutes, forming a thick dough.
  3. Gradually add softened butter while kneading for 20 minutes until smooth and slightly sticky.
  4. Cover and let rise in a warm place for about 120 minutes, until doubled in size.
  5. For custard, heat whole milk and 1 teaspoon butter with the vanilla bean until bubbling.
  6. Whisk egg yolks with 1/4 cup sugar, cornstarch, and flour, then gradually add the milk mixture.
  7. Return to the saucepan, cooking over medium heat, whisking until thickened. Refrigerate until cool.
  8. Once risen, roll out dough, spread custard on half, and sprinkle chocolate chips.
  9. Fold dough over, cut into 8 rectangles, and let rise for 120 minutes.
  10. Preheat oven to 350°F (177°C), brush with egg mixture, and bake for 10–12 minutes until golden.
  11. Prepare simple syrup by boiling 1/4 cup sugar and 1/4 cup water. Brush over warm brioches.
  12. Cool completely on a wire rack before serving.

Notes

Make ahead by preparing custard a day in advance. Experiment with different fillings.
