Description

A delightful treat combining rich chocolate flavors with refreshing peppermint, perfect for holiday celebrations and cozy nights.


Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/4 tsp peppermint extract
  • 1/2 cup mini chocolate chips
  • 1/4 cup crushed peppermint candies for topping
  • 1 cup powdered sugar for icing
  • 2 to 3 tbsp milk for icing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5 inch loaf pan.
  3. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  4. In another bowl, mix the vegetable oil, eggs, vanilla extract, buttermilk, and peppermint extract until smooth.
  5. Pour the wet mixture into the dry ingredients and stir until just combined.
  6. Fold in the mini chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the surface.
  8. Bake for 50 to 60 minutes or until a toothpick inserted comes out clean.
  9. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  10. For the icing, whisk together the powdered sugar and enough milk to reach a drizzle consistency.
  11. Once cooled, drizzle the icing over the bread and sprinkle with crushed peppermint candies.

Notes

For best results, use room temperature ingredients and avoid overmixing the batter.
