- 1 and 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/4 tsp peppermint extract
- 1/2 cup mini chocolate chips
- 1/4 cup crushed peppermint candies for topping
- 1 cup powdered sugar for icing
- 2 to 3 tbsp milk for icing
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the vegetable oil, eggs, vanilla extract, buttermilk, and peppermint extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Fold in the mini chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the surface.
- Bake for 50 to 60 minutes or until a toothpick inserted comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- For the icing, whisk together the powdered sugar and enough milk to reach a drizzle consistency.
- Once cooled, drizzle the icing over the bread and sprinkle with crushed peppermint candies.

For best results, use room temperature ingredients and avoid overmixing the batter.
