  • 5 tablespoons granulated sugar
  • 1 packet active dry yeast
  • 2 large eggs, room temperature
  • 2 3/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cut into pieces, room temperature
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon kosher salt
  • 6 tablespoons unsalted butter, softened (for filling)
  • 1/2 cup light brown sugar, packed (for filling)
  • 2 teaspoons cinnamon (for filling)
  • 1/4 teaspoon kosher salt (for filling)
  • 2 ounces cream cheese, room temperature (for frosting)
  • 2 tablespoons unsalted butter, room temperature (for frosting)
  • 3/4 cup confectioners’ sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 pinch kosher salt (for frosting)

Instructions

  1. Combine warm milk with 1 tablespoon of granulated sugar in a bowl. Sprinkle yeast over the milk, whisk gently, and let it sit until foamy—about 5 minutes.
  2. Whisk in the eggs until smooth. Combine remaining sugar, flour, and salt in a stand mixer. Pour in the yeast mixture, add butter one piece at a time while mixing. Knead at medium speed for 1 minute, then increase to medium-high until smooth, about 5 minutes.
  3. Brush a bowl with melted butter, place dough inside, cover with plastic wrap. Let rise until doubled in size—around 1 hour.
  4. Punch down the dough, roll it into a 12×20 inch rectangle.
  5. For the filling, mix brown sugar, cinnamon, and salt in a bowl. Spread 3 tablespoons of softened butter over the dough, then sprinkle the brown sugar mixture over it.
  6. Prepare a 9×13 inch baking dish with cooking spray. Fold the dough over itself two-thirds across, spread remaining butter and brown sugar mixture on the folded section, then fold remaining dough over the top.
  7. Cut the dough into 12 strips, braid the sections together, then roll into a circle in the baking dish. Cover and let rise until doubled, about 45 minutes.
  8. Preheat oven to 350°F. Brush braid with a beaten egg and bake for 20-25 minutes or until golden brown.
  9. For the frosting, combine cream cheese, butter, confectioners’ sugar, vanilla, and a pinch of salt in a bowl. Beat until smooth. Spread over warm rolls out of the oven.
