Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 cup mini cinnamon rolls, chopped
  • 1 cup whipped cream
  • 1 tablespoon caramel sauce

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs with melted butter and press into the bottom of a greased 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese with granulated sugar and vanilla until smooth, then add eggs one at a time, mixing well. Fold in sour cream.
  4. In a small bowl, mix brown sugar with ground cinnamon, fold in chopped mini cinnamon rolls, and swirl into the cheesecake batter.
  5. Pour the batter over the crust and bake for 50 to 60 minutes or until set but slightly jiggly.
  6. Turn off the oven and leave the cheesecake inside for 1 hour to cool, then refrigerate for at least 4 hours or overnight.
  7. Top with whipped cream and drizzle with caramel sauce before serving.
