- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 cup mini cinnamon rolls, chopped
- 1 cup whipped cream
- 1 tablespoon caramel sauce
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs with melted butter and press into the bottom of a greased 9-inch springform pan.
- In a large mixing bowl, beat the cream cheese with granulated sugar and vanilla until smooth, then add eggs one at a time, mixing well. Fold in sour cream.
- In a small bowl, mix brown sugar with ground cinnamon, fold in chopped mini cinnamon rolls, and swirl into the cheesecake batter.
- Pour the batter over the crust and bake for 50 to 60 minutes or until set but slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool, then refrigerate for at least 4 hours or overnight.
- Top with whipped cream and drizzle with caramel sauce before serving.
