- 6 slices of day-old bread, cut into cubes
- 4 large eggs
- 1 cup whole milk
- 1/4 cup granulated sugar
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter, melted
- 1/3 cup brown sugar
- 3 tablespoons granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
- 2 tablespoons unsalted butter, melted (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla, cinnamon, and salt.
- Add cubed bread to the mixture, gently toss, and let soak for approx. 10 minutes.
- Divide the soaked mixture among the muffin cups, pressing gently.
- Mix the melted butter and brown sugar, then spoon it over each muffin.
- Bake for 25-30 minutes until golden brown.
- Prepare topping by mixing sugar and cinnamon in a bowl.
- Brush muffins with melted butter and sprinkle with the cinnamon sugar mixture.
- Cool in the tin for 5 minutes, then transfer to wire racks.
Notes
For a healthier twist, consider using whole-grain bread or almond milk, and reduce sugar amounts.
