  • 4 large eggs
  • 1 cup whole milk
  • 1/4 cup granulated sugar

  • 4 tablespoons unsalted butter, melted
  • 1/3 cup brown sugar
  • 3 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)
  • 2 tablespoons unsalted butter, melted (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla, cinnamon, and salt.
  3. Add cubed bread to the mixture, gently toss, and let soak for approx. 10 minutes.
  4. Divide the soaked mixture among the muffin cups, pressing gently.
  5. Mix the melted butter and brown sugar, then spoon it over each muffin.
  6. Bake for 25-30 minutes until golden brown.
  7. Prepare topping by mixing sugar and cinnamon in a bowl.
  8. Brush muffins with melted butter and sprinkle with the cinnamon sugar mixture.
  9. Cool in the tin for 5 minutes, then transfer to wire racks.
