Description

A creamy, delicate dessert with the subtle sweetness of vanilla that’s perfect for any gathering.


Ingredients

Scale
  • 4 cups whole milk
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 teaspoon fine salt
  • 1 teaspoon pure vanilla extract
  • Ground nutmeg for sprinkling
  • Fresh berries for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Place a 1 1/2-quart round baking dish inside a larger deep baking pan to create a water bath.
  2. In a small saucepan, warm the milk until bubbles form around the edge. Remove from heat immediately.
  3. In a mixing bowl, whisk together eggs, granulated sugar, and salt until blended.
  4. Gradually whisk the hot milk into the egg mixture, then stir in the vanilla extract.
  5. Pour the mixture through a fine-mesh strainer into the baking dish and sprinkle with ground nutmeg.
  6. Place the baking pan onto the oven rack and fill it with hot water until it reaches 1/2 inch below the baking dish rim.
  7. Bake for 55 to 60 minutes until a knife inserted comes out clean, with the center slightly jiggly.
  8. Remove the baking dish from the water bath and let it cool for 30 minutes before refrigerating until chilled.
  9. Serve cold, optionally garnished with fresh berries.

Notes

For extra flavor, infuse milk with vanilla bean. You can also try adding almond extract or lemon zest.
