Ingredients

  • ½ medium onion, diced
  • 1 teaspoon butter
  • 2 eggs
  • ¾ cup milk
  • ¾ cup Italian breadcrumbs or seasoned breadcrumbs
  • 2 pounds lean ground beef
  • 1 tablespoon ketchup or chili sauce
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup chili sauce
  • ½ cup ketchup
  • 2 tablespoons brown sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking pan.
  2. In a skillet, melt the butter and cook the diced onions until tender.
  3. In a separate bowl, whisk the eggs, milk, and breadcrumbs, letting it sit.
  4. Combine the ground beef, onions, sauces, seasoning, parsley, salt, and pepper in a mixing bowl.
  5. Shape the mixture into a loaf and place it in the baking pan.
  6. Bake for 40 minutes.
  7. Mix the glaze ingredients and apply it to the meatloaf.
  8. Return to the oven and bake for an additional 15-30 minutes.
  9. Broil for 1-2 minutes for a caramelized top if desired.
  10. Let the meatloaf rest for 10 minutes before slicing.

Notes

Opt for lean ground beef for a healthier meatloaf. Mix ingredients by hand for best results.
