Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1/4 cup water
  • 1 cup pumpkin puree

Instructions

  1. Preheat the oven to 350°F and grease your loaf pan(s).
  2. In a large bowl, sift together all-purpose flour, granulated sugar, baking soda, salt, ground cinnamon, and ground nutmeg until combined.
  3. In another bowl, whisk together the vegetable oil, eggs, and water until smooth.
  4. Combine the wet and dry ingredients gently, folding in the pumpkin puree until the batter is smooth.
  5. Pour the batter into the greased loaf pans and smooth the top.
  6. Bake for about 55 minutes for a large loaf or 30 minutes for mini loaves, checking with a toothpick for doneness.
  7. Once baked, cool on a wire rack before slicing.
