- 1 cup coconut milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 2 teaspoons unflavored gelatin
- 1 teaspoon pure vanilla extract
- 1 cup fresh pineapple, diced
- 1/4 cup toasted coconut flakes
Instructions
- Sprinkle gelatin over 2 tablespoons of cold water in a small bowl and let it rest for 5 to 10 minutes until softened.
- In a medium saucepan, combine coconut milk, heavy cream, and granulated sugar. Place it over medium heat, stirring gently until the sugar fully dissolves and the mixture is warm but not boiling.
- Add the bloomed gelatin and the pure vanilla extract to your warm mixture, whisking continuously until the gelatin completely dissolves.
- Carefully pour the mixture evenly into individual serving molds or cups. Allow them to cool at room temperature for about 30 minutes.
- Once cool, place the panna cotta in the refrigerator and let it chill for at least 240 minutes, or until fully set.
- Just before serving, top each panna cotta with diced fresh pineapple and a sprinkle of toasted coconut flakes.
Notes
For a richer flavor, use full-fat coconut milk. Experiment with different tropical fruits as toppings such as mango or berries.
