Description

A delightful dessert that combines creamy coconut with the tropical sweetness of fresh pineapple, offering a smooth and velvety texture.


Ingredients

  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 teaspoons unflavored gelatin
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh pineapple, diced
  • 1/4 cup toasted coconut flakes

Instructions

  1. Sprinkle gelatin over 2 tablespoons of cold water in a small bowl and let it rest for 5 to 10 minutes until softened.
  2. In a medium saucepan, combine coconut milk, heavy cream, and granulated sugar. Place it over medium heat, stirring gently until the sugar fully dissolves and the mixture is warm but not boiling.
  3. Add the bloomed gelatin and the pure vanilla extract to your warm mixture, whisking continuously until the gelatin completely dissolves.
  4. Carefully pour the mixture evenly into individual serving molds or cups. Allow them to cool at room temperature for about 30 minutes.
  5. Once cool, place the panna cotta in the refrigerator and let it chill for at least 240 minutes, or until fully set.
  6. Just before serving, top each panna cotta with diced fresh pineapple and a sprinkle of toasted coconut flakes.

Notes

For a richer flavor, use full-fat coconut milk. Experiment with different tropical fruits as toppings such as mango or berries.
