Description

A delightful and aromatic dish that combines the flavors of the tropics with a warm, home-cooked meal featuring shredded turkey and spinach in a rich coconut milk curry.


Ingredients

  • 2 cups shredded turkey
  • 1 can coconut milk
  • 2 cups fresh spinach
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons oil

Instructions

  1. In a large skillet, heat the oil over medium heat.
  2. Add the chopped onion, garlic, and ginger to the skillet; sauté until the onion becomes translucent.
  3. Stir in the curry powder and cumin; cook for another minute until fragrant.
  4. Pour in the coconut milk and mix well.
  5. Add the shredded turkey and spinach; stir and let it simmer for approximately 10 minutes until the spinach wilts.
  6. Season with salt and pepper to taste.
  7. Serve warm over rice or alongside crusty bread.

Notes

For added brightness, incorporate lime juice or diced bell peppers. Fresh cilantro makes a great garnish.
