- 2 cups shredded turkey
- 1 can coconut milk
- 2 cups fresh spinach
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon curry powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons oil
Instructions
- In a large skillet, heat the oil over medium heat.
- Add the chopped onion, garlic, and ginger to the skillet; sauté until the onion becomes translucent.
- Stir in the curry powder and cumin; cook for another minute until fragrant.
- Pour in the coconut milk and mix well.
- Add the shredded turkey and spinach; stir and let it simmer for approximately 10 minutes until the spinach wilts.
- Season with salt and pepper to taste.
- Serve warm over rice or alongside crusty bread.
Notes
For added brightness, incorporate lime juice or diced bell peppers. Fresh cilantro makes a great garnish.
