- 12 large fresh strawberries (rinsed, hulled, and halved)
- 8 oz block cream cheese (softened)
- 1/3–1/2 cup powdered sugar (sifted)
- 1 tsp vanilla extract
- 1 pinch fine salt
- 1/3 cup cookie butter (gently warmed)
- 2–3 tbsp crushed speculoos cookies
- Lemon zest
- Melted dark chocolate or micro mint for garnish
Instructions
- Rinse and dry strawberries.
- Hull, halve, and carve a shallow well in each strawberry half.
- In a mixing bowl, combine softened cream cheese, sifted powdered sugar, vanilla extract, and a pinch of salt. Beat until smooth and fluffy.
- Gently warm the cookie butter until pourable.
- Fold a portion of the warm cookie butter into the cream cheese mixture to create swirls.
- Fill a piping bag with the cheesecake mixture and pipe into each strawberry well.
- Sprinkle crushed speculoos cookies over the filling, drizzle with reserved cookie butter, and finish with lemon zest or dark chocolate.
- Chill for 10-15 minutes before serving.
