Description

Delicious fresh strawberries filled with a rich, creamy cheesecake and cookie butter mixture, perfect for gatherings or a sweet treat.


Ingredients

  • 12 large fresh strawberries (rinsed, hulled, and halved)
  • 8 oz block cream cheese (softened)
  • 1/3–1/2 cup powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 1 pinch fine salt
  • 1/3 cup cookie butter (gently warmed)
  • 2–3 tbsp crushed speculoos cookies
  • Lemon zest
  • Melted dark chocolate or micro mint for garnish

Instructions

  1. Rinse and dry strawberries.
  2. Hull, halve, and carve a shallow well in each strawberry half.
  3. In a mixing bowl, combine softened cream cheese, sifted powdered sugar, vanilla extract, and a pinch of salt. Beat until smooth and fluffy.
  4. Gently warm the cookie butter until pourable.
  5. Fold a portion of the warm cookie butter into the cream cheese mixture to create swirls.
  6. Fill a piping bag with the cheesecake mixture and pipe into each strawberry well.
  7. Sprinkle crushed speculoos cookies over the filling, drizzle with reserved cookie butter, and finish with lemon zest or dark chocolate.
  8. Chill for 10-15 minutes before serving.
